Salmon Fillet encrusted with Herbed Potatoes served over a Bed of Julienne Root Vegetables and presented with Roasted Fennel and Beet Coulis with Saffron Wild Rice

Vegetable Moussaka
Layers of Zucchini, Yellow Squash, Red Peppers and Eggplant topped with Feta and Parmesan Cheese and an Artichoke Pomodoro Sauce and served with Asparagus
